Saint Peter’s first decade can only be described as remarkable. Since the Sydney restaurant opened on Oxford Street in 2016, owners Josh and Julie Niland have ticked off a litany of achievements and accolades that place the restaurant among the most impressive in the country. From Josh Niland taking home Gourmet Traveller’s Best New Talent title in 2017 to the relocated, up-sized dining room and bar nabbing our Restaurant of the Year gong in 2025, Saint Peter has changed the way the chefs and diners talk about, understand and eat seafood.
To celebrate the Sydney restaurant’s tenth birthday in 2026, Josh and Julie Niland will welcome some of the world’s most exciting and innovative chefs for a series of exclusive dinners serving collaborative menus for one night only. The first event on Wednesday 15 April (bookings available from 4pm on Wednesday 18 March) will welcome Rasmus Munk of mind-bending, multi-sensory Copenhagen restaurant Alchemist, which is currently placed at number five on the World’s 50 Best Restaurants list and holds two Michelin stars.

While dates aren’t confirmed, more names in the mix for collaboration dinners include Virgilio Martínez of Central in Peru (which took top spot on the 2023 list of the World’s 50 Best Restaurants); twice-named Best Restaurant in the World El Celler de Can Roca’s Joan Roca; American chef Wylie Dufresne; Sydneysiders Kylie Kwong, Peter Doyle and Stephen Hodges; and Pascal Barbot of Parisian restaurant Astrance — with more to come.
“This series of dinners is our way of celebrating and thanking the exceptionally talented team at Saint Peter that contributes tirelessly to making it the special place that it is,” said Josh Niland. “We want to provide them the opportunity to stand alongside the chefs we all admire most — to cook, learn and be inspired by them.”

As well as welcoming the public to celebrate with them at these one-off events, the Nilands are also offering two seats at each to industry peers.
“We have two complimentary tickets set aside for each dinner. These will be given to deserving hospitality professionals through a nomination process… through our social media. I really couldn’t think of a better way to celebrate ten years, ” said Josh Niland.
