As one of Australia’s favourite oceanfront establishments, Icebergs Dining Room and Bar has brought back its annual Summer Series adding special menus, music programming, and signature events to its offering for the warmer months, with regular weekly programming starting in December.
In 2026, the Summer Series highlight will be La Cura: a residency from Rome-based, Abruzzese chef Sarah Cicolini of SantoPalato, a celebrated modern trattoria known for its warmth, connection to producers and Cicolini’s take on the Roman staple, carbonara. She’ll work with culinary director Alex Prichard to craft a one-off, three-course menu served at dinner on Wednesday 4 February, and lunch and dinner on Thursday 5 February, 2026. Tickets are $200pp, including a drink on arrival.

“Bringing my Roman dishes to Sydney is incredibly exciting,” Cicolini said in a statement. “Working with Australian producers opens up a whole new palette of ingredients, and I’m inspired by the chance to blend the extraordinary freshness of Australian produce with the traditions I carry from home. To do this at a venue as iconic as Icebergs Dining Room and Bar feels like the perfect meeting of two worlds.”
For the duration of the Summer Series, Icebergs Sunsets will see resident DJ Dolso spinning tunes Wednesday–Friday evenings with drinks specials by Don Julio, Tanqueray, and Ketel One. Saturdays will host live music between 4pm and 9pm, and Icebergs Sundays will kick off with Don Julio 1942 sessions from 3pm with a signature Margarita menu and snack specials including suckling pig, corn and sage fritti.

Guests can toast to New Year’s Eve with a three-course Sunset Lunch (bookings between 4.30pm and 7.30pm) of Icebergs classics with music by Dolso — evening bookings have already been snapped up. Keeping the Pacific-facing celebrations rolling into 2026, bookings are available for a la carte dining on New Year’s Day between midday and 3pm; the ever-popular later New Year’s Day session (this year featuring Double Touch with special guests Reigan and Pauli and live DJ sets) is also booked out.
