Jason Barratt from Supernormal Brisbane shares this elegant take on the Lychee Martini. “All of the tropical fruit and freshness, grounded by the subtle savoury quality of almond and fine vermouth,” says Barratt. “This is perfect for summer parties. Prepare a large batch in advance and pour into chilled glasses, so guests get a cocktail as soon as they walk through the door.”

Ingredients

Method

1.

Place two coupe or Martini glasses in the freezer to chill.

2.

Combine ingredients in a mixing glass. Fill with ice. Using a bar spoon, stir until mixing glass is lightly frosted.

3.

Strain into chilled glasses. Garnish with maraschino cherry to serve.

Note

La Blanche is an apple brandy produced by one of Normandy’s top Calvados producers, Christian Drouin. It’s not aged for the minimum required two years in oak barrels to be legally classed as Calvados. If La Blanche isn’t available, substitute an alternative young Calvados or even vodka if preferred.
