The House of Suntory’s flagship Hibiki whisky continues to set the standard for elegance and complexity. Now, the acclaimed label has partnered with celebrated Japanese artist Hiroshi Senju — renowned for his ethereal waterfall paintings — to create two extraordinary limited-edition releases that transform premium whisky into objet d’art. To celebrate the collaboration, Sydney’s acclaimed restaurant Margaret will host an exclusive dinner on 20 November, uniting Japanese whisky and contemporary cuisine in perfect harmony.
Hibiki 21 Years Old and 30 Years Old are reborn through Senju’s Waterfall on Colours “Hibiki”, a serene artwork crafted from mineral pigments, marble powder and water. Ten gradations of purple, inspired by Kokimurasaki, a colour symbolising Japanese nobility, cascade across each design, echoing the layered complexity within the liquid itself.
This is harmony made tangible: a philosophy central to both Senju’s practice and Hibiki’s blending artistry.

Hibiki 21 Years Old: Elegance in every drop
The Hibiki 21 Years Old limited edition arrives adorned with Senju’s cascading imagery on both label and presentation box. Inside, a masterful blend from Suntory’s three historic distilleries — Yamazaki, Hakushu and Chita — delivers blooming notes of sandalwood, honeycomb and dried apricot, finished with the distinctive warmth of Mizunara oak.
It’s a whisky that rewards contemplation, with a roundness and grace that unfolds slowly on the palate.
Hibiki 30 Years Old: A collector’s masterpiece
For the serious collector, the Hibiki 30 Years Old takes presentation to another level. Housed in a striking byōbu-style multi-panel display case, this is as much a gallery piece as it is spirit. Layers of brown sugar, gingerbread and dried fig build into a symphony of depth and spice — an experience both meditative and indulgent.
Both expressions are bottled at 43 per cent ABV and available in strictly limited quantities worldwide. In Australia, they’re available exclusively through Kent Street Cellars, priced at $1,800 (Hibiki 21) and $14,000 (Hibiki 30).

Experience Hibiki in Sydney
Sydney whisky lovers can immerse themselves further into the world of Hibiki at An Extraordinary Evening of Japanese Artistry Inspired by Nature, hosted at Margaret in Double Bay on 20 November 2025. The exclusive event brings together Neil Perry and Shinji Fukuyo, Suntory’s fifth-generation Chief Blender, for an unforgettable celebration of Japanese whisky and culinary artistry.
Neil Perry will be sharing his vision behind the four-course menu and how the Margaret culinary team symbiotically combine Japanese and Australian flavours by using refined techniques and honouring seasonal ingredients. House of Suntory ambassador and award-winning bartender, Natalie Ng, has also curated four exclusive Hibiki cocktails to highlight and pair perfectly with each course.
As a memorable keepsake of this special evening, each guest will receive a departure gift of Hibiki Japanese Harmony—Suntory’s elegant, blended whisky that embodies the Japanese art of achieving perfect balance.
This is more than dinner, it’s an immersive experience celebrating craftsmanship, tradition, and the pursuit of harmony. It’s a rare opportunity to taste the philosophy of Hibiki in the glass and on the plate, guided by two masters of their craft.
Hibiki whisky has spent more than a century perfecting the art of Japanese blending. With this Hiroshi Senju collaboration, that artistry transcends the bottle — becoming something to behold, collect and, ultimately, savour. In both form and flavour, this is Japanese whisky elevated to its highest expression.
