Gourmet Traveller and La Mer have partnered with acclaimed chef Neil Perry to present the Miracle Meal at his Sydney restaurant Gran Torino. The two-day collaboration brings Perry’s signature culinary precision to a menu inspired by La Mer’s oceanic origins.
The Miracle Meal comes served on a silver platter, presenting the seafood-rich Miracle Broth, a prawn roll and a crisp martini. Guests will also receive La Mer’s Mini Miracles valued at $95, including the brand’s day and night creams, so be sure to book your seat over at Gran Torino.
The Miracle Meal
Perry is a longtime lover and user of La Mer, saying that “no matter what,” it’s a part of his daily ritual.
Now, we’ve joined forces with La Mer and Perry to bring The Miracle Meal to life — a collaboration shaped by a shared appreciation for true craftsmanship, quality, patience and precision. Inspiration is drawn from exceptional produce, depth of flavour and, naturally, a nod to the sea as Perry creates his interpretation of La Mer’s iconic Miracle Broth elixir.
Together, the partnership finds common ground in ritual, refinement and transformation. From the aperitivo tray to the savoury broth at the centre of the menu, the experience leans heavily into texture, atmosphere and thoughtful detail.
Inside The Menu
The menu, inspired by La Mer, “is all about the wonderful ingredients that create the fantastic cream and how all those incredible flavours work so well in food,” explains Perry.
It leans into savoury marine flavours lifted by citrus, sesame and delicate spice. Perry elaborated that the star of the meal, the Miracle Broth, draws inspiration from both Italian and Japanese cuisines.
When dining, Perry wants you to understand that all the “beautiful marine accents are not just because of the partnership; La Mer has this incredible marine kind of feel and sense to it,” but the marine notes lend a savoury umami depth of flavour synonymous with his cooking.

As Inspiration
For Perry, quality and patience are two pivotal parts of cooking, resonating with La Mer’s ethos. He finds it important to give food “time to develop flavour,” and as you let the food evolve, the dish develops “such structural integrity and taste, [which is] something that you really cannot rush or replace.” Similarly, La Mer’s own elixir is sustainably sourced from self-regenerating giant sea kelp found only on Vancouver Island, then fermented over four months.
For Perry, the connection between marine ingredients, patience and refinement felt instinctive. He found it a very natural process to create a food experience reflective of the iconic Crème de la Mer, with ingredients such as “kelp and citrus being so important in food, that it was a wonderful transition to the recipe for the broth.”
La Mer itself has a rich history. Developed by aerospace physicist Dr Max Huber after a lab accident, he spent 12 years and performed more than 6000 tests to perfect the four-month-long fermentation process that led to the healing power of the sea being harnessed for skin rejuvenation purposes.
The pristine giant sea kelp is the hero ingredient in the cell-renewing elixir, which is the basis of all La Mer skincare products as the kelp’s microbiome supercharges the Miracle Broth through its self-generating bioactives.
Guests at Gran Torino during our collaboration will sample the restorative properties in the form of La Mer’s Crème de la Mer and The Rejuvenating Night Cream.
