Duck and sausage cassoulet

John Paul Urizar

There’s one upside to the colder weather, and that’s the many hearty casserole recipes you can make to keep you and your family warm and full. Why are they called casseroles? Essentially, they’re a stew or slow-cooked dish named for the dish they’re cooked in: a casserole.

We have traditional French stews such as boeuf Bourguignon, seafood bouillabaisse, rich duck cassoulet and our variations on a staple chicken casserole you’ll add to your recipe book for life. You’ll also find a Greek-style stewed rabbit, and a top chef’s guide to making ratatouille — all dishes that are perfect to make in a casserole.

Like most slow-cooked recipes, we think they’re even better the next day — so plan ahead, and make a little extra. Here are our favourite casserole recipes, from hearty beef stews to chicken casseroles.
